Take Care Of Holiday Leftovers Now

I know its way to early for anyone to be worrying about leftover holiday turkey, but I don't care. See, every year we get bombarded with tons of leftover recipies, and the trouble is that we get so many at one time. Who has time to wade through them all before the turkey all goes to sandwiches? So, may I present the first of the what-to-do-with-the-leftovers recipe?
Croquettes -- turkey or chicken (need not be organic)
1 cup thick white sauce
2 cups finely chopped
1 cup cooked rice
2 tbs finely chopped onion
2 tbs minced parsley
1/2 tsp salt
1/8 tsp pepper .
3 eggs milk
bread crumbs
Add meat, rice, onion, parsley, salt and pepper to white sauce. Remove from heat. Beat 2 eggs slightly. Add a small amount of hot mixture to eggs and stir into chicken mixture. Divide this mess into a cupcake tin. Chill 2 hours. Scoop mixture from cupcake tin, shape into croquettes, roll in bread crumbs, dip in milk, roll in bread crumbs again. Fry in a little bit of oil and cook until brown. If you're going make a bunch and freeze, put them on a cookie sheet after the second breading. Let them freeze separately and store in whatever you normally use.
